PCOS-Friendly Red Cabbage Coleslaw

A healthier version of the classic coleslaw, full of flavour and nutrients. The recipe contains walnuts (packed with Omega-3 healthy fats that help lower inflammation and balance insulin levels), red cabbage (containing phytonutrients and vitamin C) and Apple cider vinegar (improves insulin sensitivity), amongst others.

PCOS-Friendly Red Cabbage Coleslaw

6 PORTIONS

  • ½ cup apple cider vinegar
  • 2 tbsp mustard
  • 2 tbsp agave syrup
  • a pinch of cayenne pepper
  • ½ head of red cabbage
  • 450 g carrots
  • 1 ¼ cup  walnuts
  • 4 green onions
  • salt, to taste

Stir together the vinegar, mustard, agave syrup and cayenne pepper in a small bowl. Thinly shred the red cabbage and carrots, chop the walnuts coarsely and slice the green onions finely. 

Place everything in a large salad bowl, add the dressing and mix. Season with a pinch of salt, place in the fridge and serve cold.
