Raw coconut balls are the perfect choice, and you can make them in endless variations! This version includes dried apricots which is not only tasty but beneficial for those of us with PCOS, since it contains high levels of fibre that can help manage insulin levels.
Raw Apricot Balls
- 1 cup cashews
- 1 cup rolled oats
- 4 tsp grated lemon peel
- 2 cups dried apricots
- ½ cup shredded coconut
Mix the cashews in a food processor to a crumbly mixture. Add oats, lemon peel and a few apricots at a time and pulse to a sticky mass that holds together when you roll it with your hands (depending on how dry the apricots are you may need fewer for it to stick). Shape into balls and roll them in the shredded coconut.
