Chocolate Walnut Raw Brownie
Base
- 1 cup walnuts
- 1 cup dates
- 1/2 cup cocoa powder
- 1/2 cup almonds
- A pinch of salt
Chocolate Topping
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 1/4 cup liquid stevia
- A pinch of salt
- 1/4 teaspoon vanilla extract
Pulse the walnuts in a food processor until they form a crumbly mixture. Add salt and cocoa powder, and continue to blend until well combined. Add a few dates and blend until the mixture becomes sticky and slightly crumbly. Add more dates if the mixture is not sticky enough.
Transfer the mixture to a bowl and stir in chopped almonds. Line the bottom of a baking dish with parchment paper and press the mixture firmly into the bottom.
Melt the coconut oil and combine it with the remaining ingredients for the chocolate topping in a bowl. Stir until you have a smooth batter, then spread an even layer over the base. Place in the freezer for about 1 hour to allow the chocolate topping to firm up. Cut into 8 pieces using a sharp, slightly warmed knife, and serve!
