Pairing carbohydrates with fat will help maintain a healthy weight and improve PCOS symptoms. Avocados are a great option to pair with carbs as it’s high in healthy fats.
This helps to slow the absorption of glucose in the body, resulting in insulin levels becoming less affected. High fat foods also help make your meal more full and keep you satisfied longer.
- 3 ripe avocados
- 1 lemon
- 2 tablespoons capers
- 3 spring onions
- 1 jalapeño
- ½ cup fresh cilantro
- ½ cup parsley leaves
- salt and pepper, to taste
Dressing
- 1 ½ tablespoons olive oil
- 1 ½ tablespoons white wine vinegar
Remove the pits and slice the avocados into slices, squeeze some lemon juice over them to prevent them from browning too quickly, and place them in a salad bowl together with the capers.
Thinly slice the spring onions, core and chop the jalapeño (keep the seeds if you like a bit more heat), coarsely chop the cilantro and parsley (remove the stems), and place everything in the salad bowl.
Whisk together the olive oil and white wine vinegar and drizzle over the salad. Give a few turns of the salt and pepper grinders and serve immediately.
