Can I have potatoes if I am on the PCOS diet?

I LOVE potatoes, but I’ve heard they spike blood sugar levels which isn’t ideal for PCOS. Do I have to avoid them altogether?

White potatoes have a very high glycemic load (High GI foods have a rating of 70-100, and baked potatoes are rated as 100, while boiled potatoes are rated as 82). However, cooling or reheating potatoes reduces their GI by as much as 30-40%. In other words, if you're a huge fan of potatoes, opt for dishes with cooked and cooled potatoes, or take the extra step of pre-cooking them, letting them cool, and then reheating before enjoying them in a meal. Another tip is to look for the Carisma variety, as it has a GI as low as 53.
